Paleo Carrot Muffins!

These "Paleo Carrot Muffins" are perfect if you're feeling the need for a little treat but you don't want to ruin your diet! They're completely paleo, guilt free, and taste amazing! Try them out, enjoy them, but remember they shouldn't make up the majority of your diet! Use them sparingly as a treat, and enjoy.

 Here's what you'll need ...

Dry ingredients
3 cups grated carrots
1/3 cup almond flour
1 tablespoon cinnamon 
1 teaspoon nutmeg 
1 teaspoon baking soda
Pinch of salt
1/2cup walnuts
1/2cup organic raisins 

Wet ingredients
3 eggs 
2/3 cup almond butter
1 tablespoon olive oil 
2 tablespoon honey

- Mix the dry ingredients together in a large bowl
- Mix the wet ingredients in a separate bowl
- Combine the wet ingredients into the bowl that has the mixed dry ingredients. Mix them all together 
- Then,
- Tim portion it all out into a muffin pan and bake at 350 for 20 mins If nothing sticks on the 
fork it's cooked.
- Check them to see if they're cooked by poking the muffins with a fork. 

- Leave them to cool, and enjoy!
